Baked Talapia with Pak choi and Mushrooms

Bake the whole Tilapia and eat with the pak choi

Sautee the mushrooms

Add the pak choi

Cook till pakchoi is wilted

Golden Shallow Pan Fried Shrimp

Season Shrimp
Lightly coat in flour
Fry in hot Canola Oil
1 minute each side

African Food

I discovered at the party that it consists of entirely too many carbs....

I had fish and something else, but the spread was really good.

Fried Tilapia

I didn't dredge in flour.

I just seasoned it and fried as is...
I let it sit in the 2 tbsp of lemon juice and seasonings for about 15 minutes before I fried it
I let the napkins soak up any excess Canola oil
Delicious

Baked and Roasted Eggplant with lamb and peppers

Cut up whole eggplant into cubes.

Add seasoning to taste
Add cut up seasoned lamb
Cut up sweet peppers and add

Add two tbsp canola oil
Bake at 325F for 40 minutes

Mix and broil at 450F for an additional 15 minutes

Serve.
Very delicious

Eggplant croquettes

So I am figuring out more things to do with eggplant.
These pics are kinda dark :(

So I baked one cubed eggplant at 325F for 30 minutes or until soft
Seasoned to taste
Added 1tbsp butter


When cool drain if there is still liquid

Add one can tuna
2tbsp mayo
2 tsp mustard

Pepper to taste
1 1/2 cups of bread crumbs


Form into croquettes or patties

Fry till golden

Serve with meat or eat on their own
