I Can't Deal With Cod

I made great cod and pak choi.
I stir fried everything.
Great.

Except I don't know what to do with cod except deep fry in batter to make fish and chips.
When you try to sautee cod it becomes so chewy so fast!!
ARGH!!!

So frustrating.
Fish is supposed to be easy!
The pak choi was delicious though....

I wouldn't really use cod, or any fish except for shellfish, in a stir fry. It would just flake up and dry out from all the stirring.

Try this instead : season the cod to your taste, and allow it to marinate for up to 30 minutes. Dredge it lightly in flour, being careful to dust off any excess flour, and pan fry over medium heat, in a non-stick pan, turning once. Don't go overboard with the oil. Cooking time will depend on the thickness of your fillet. Remove the fish from the pan, then add your veggies and stir fry those. The veggies will absorb some of the fish flavour, and you won't have dried-up bits of cod all over the place. Hope that helps.
