Ok so I have to admit this is the most delicious version of baked eggplant I ever made
One of the secrets to the flavor is black truffle oil and I am never going to go without this ingredient again in my kitchen EVER!
It is good with EVERYTHING...from salad to eggs to meats to all veges..its just good
Ok
Slice them up and ...
Slightly olive oil the baking pan and add parsley
Coat the eggplant slices and arrange like so
Add more seasonings to taste includng just a drizzle of Truffle oil on each.
Bake 350F for 45 mins.
Smells delicious at 30 mins
Browns at 45 mins
The taste is heavenly and the mouth-feel is wow (umami)!
