Plantains

The ripe plantain can be boiled or fried.
People here think you do something special to get the fried plantain to turn brown and crispy.
This is not the case.
The natural sugar in the planatin caramelizes in the hot oil. Simple as that.
I like them both (boiled and fried), but I prefer the fried.
Here is how the boiled looks.
