Gazpacho

This one taste like a mild tomato soup.

You can tell they have hard boiled egg in it because of the grainy mouth feel.
I added vegetables and heated it up..
It was tasty after that.

I remember having this when I was younger and disliking it.

I tried it again recently and liked it so much I got another bottle

Thai Curry Honey Bleu shrimp

This was a thai curry shrimp with a twist. A great taste combination of Bleu cheese dressing and honey was added. It is soooo good believe me!

So we shelled our shrimp and deveined. It takes a little while or you can pay some more money have them already shelled and deveined.

Then season the shrimp as desired.



And mix like so and let that sit for a while for the flavors to soak in.


Heat oil in pan (two Tablespoons) and add green curry.


Add shrimp stir and remove from heat. You don't want to over cook the shrimp so this is a must watch process.



Put the shrimp back on the heat after a good stir and add belu cheese dressind (about 2 tbsp) and 1tbsp of honey.

Here


Stir in and make sure the heta is on low. When the shrimp turns this light pink, give it another minute on the heat. Stir periodically.


Prepare your veges...


Serve with the shrimp

I do eat though...veges a lot and tomato juice and chicken or lamb or fish...so what's new eh?

Cook till pakchoi is wilted

African Food

I discovered at the party that it consists of entirely too many carbs....

I had fish and something else, but the spread was really good.

Fried Tilapia

I didn't dredge in flour.

I just seasoned it and fried as is...
I let it sit in the 2 tbsp of lemon juice and seasonings for about 15 minutes before I fried it
I let the napkins soak up any excess Canola oil
Delicious

Baked and Roasted Eggplant with lamb and peppers

Cut up whole eggplant into cubes.

Add seasoning to taste
Add cut up seasoned lamb
Cut up sweet peppers and add

Add two tbsp canola oil
Bake at 325F for 40 minutes

Mix and broil at 450F for an additional 15 minutes

Serve.
Very delicious

Eggplant croquettes

So I am figuring out more things to do with eggplant.
These pics are kinda dark :(

So I baked one cubed eggplant at 325F for 30 minutes or until soft
Seasoned to taste
Added 1tbsp butter


When cool drain if there is still liquid

Add one can tuna
2tbsp mayo
2 tsp mustard

Pepper to taste
1 1/2 cups of bread crumbs


Form into croquettes or patties

Fry till golden

Serve with meat or eat on their own

Satueed cabbage with nuts and raisins

Season as desired with salt, pepper etc
BUT... you need to sautee with 2 tbsp of canola or olive oil
Add 1/2 cup or nuts and raisins

Spicy sweet Curried Mangoes

This is a popular side in Trinidad.
We eat it with roti, on its own, or as a side with other dishes.

For this recipe
Three large semi ripe (not ripe, not green) mangoes

3/4 cup sugar
4 cups water
Garlic
Crushed, dried red pepper flakes to taste
1tbsp salt
1tbsp lemon juice
1/2 tbsp chili powder
1 cut up jalepeno pepper

3tbsp green curry

Method
Wash and chop mangoes with a chopping blade, through the seed.

Leave the skin on.

Remove the inner portion of seed

Heat 1 tbsp of curry powder and crushed red pepper in pan

Add mangoes and stir

Add sugar

Add chilli powder and garlic
Add water and then the rest of the curry
Add Jalepeno

Bring mixture to a boil stirring occasionally
Then simmer until mango is very soft. (Approx 1hr)


Serve. Sauce will be thick yet runny.

This is absolutely delicious

Satueed with Pak choi


Add Honey Roasted Peanuts

The liquid in the pak choi seeps out when you are sauteeing..Not to worry it boils down enough.

No extra seasoning is needed because the lamb that was pre-roasted is heavily seasoned.... remember its the African Roasted lamb I made before.
