Go to Albertson's and pick up one or ten (like I do), 4 oz potions of Wild Pacific Salmon.
They are only $1.00 per package.

I love it!

It's amazing, and one of my new favorite things to eat!

Seasoned Baked Beef Salad

Season beef and bake uncovered at 350F for 45 mins.

Beak up
Add to cabbage and carrot mix

Add dressing

Mix and serve

Broccoli and Salmon

Again
Low Carb

Quick
Delicious
Season (as desired) salmon and sautee for 2 minutes on each side.
Each piece of salmon is a 3 or 4 oz portion.
Remove from pan and add frozen broccoli.

Cook till hot. Do not let it get too soft.
This meal fills you up, so you won't want to eat for the rest of the day.

Salmon and caramelized mushrooms

Oh... this was so quick, yet so delicious and low carb.
Season your salmon, as desired.

The salmon cooks quickly so stand close to your pan.

Cook your mushrooms down as desired.
Looks and smells scrumptous. Sis would like this if she were not allergic to mushrooms :(

Chocolatey Coffee Alcohol Bread Bran Pudding

I decided that I wanted to make a different Bread Pudding.
This recipe is all mine and so easy.

You can sit in front of the television and make this one :)

You will need:
Stale bread (I used some 2 week old bread I had in the fridge)
I used 3 whole hamburger buns and broke them up into useable pieces
Chocolate creme cookies which I broke up and put on top of the bread. I used 10.
Raisin Bran Cereal (for fiber). About 2 cups.

1 and 1/2 cups of coffee liqueur (if you don't have this just use 3/4 cup rum)
One chocolate pudding cup

Three eggs

Beaten with 1/4 cup of chocolate icing and 1/2 cup of milk (see picture)
Add the coffee liquer to the bread and cookies and bran flakes.

The bread will soak up the liquid nicely.
Add the pudding cup to the bread and cookie mixture

Incorporate the egg mixture into the bread and cookie mixture
Let sit for 10 minutes

Bake at 350 degrees for 30 minutes.

Scoop your serving out with a spoon.
It's soft yet firm. You feel the alcohol when you eat this.
Pop some ice-cream with it if you want.


You don't need any extra added sugar at all in this pudding.

Long cake, short cake, icing

Make your cake and let it cool thoroughly.
This is a messy business so rest cake on wax paper before you begin.

Cut top off to even things out

Discard top part or eat it

Slice horizontally using long knife


Slice vertically

Separate pieces


Start to ice the layers


Voila

Wine Diaries

First Week
I was excited. I had prepared my wine and it was sitting in the cupboard fermenting.
There was a strong yeast smell pervading my apartment.
A nice warm, yeasty smell.

Second week
Still yeasty but not as strong. I added a little extra sugar to increase the alcohol content of the wine.

Third week
Concern.
No yeasty smell. Smelled like old fruit.
Frantic call to mom
Leave it alone she says
What about the smell mummy? (I was convinced that some bacteria had gotten in and that the wine was in deep trouble)
Strain and bottle it, she said, then leave it alone.
But....
But nothing just leave it alone
I acquiesed....Bottled it and left it alone.


It isn't as red as I thought it would be ...It's kinda pink. I like pink.
There's no alarming smell now


The fruit really had gotten old (which of course it should). I threw that away in the trash

Straining through cheese cloth is really good because none of the yeasty remnants gets through.
I can't wait to taste it!

Catching Up Food

When you go out to catch up on old times, you usually just go to 'some old place'
Some old place turned out to be Chili's, and Khue got the carb plate haha.

No matter, because he is an avid gym guy
I got fish and vegetables.

Only thing was that the vegetables were not ready, and so they just brought me a big plate with fish on it..... :(
They brought the salad and the veges later :(
Nevertheless I had fun.
