I will try based on this one and modify if need be
1 large eggplant
1/4 cup lemon juice
1/4 cup tahini
2 cloves garlic, minced/crushed
preheat the oven to 500F
prick the eggplant with a fork several times all around
put it in the oven on the shelf
after 10 mins, turn it 90 degrees (1/4 turn)
after 10 more mins, turn it 90 degrees (1/4 turn)
after 10 more mins, turn it 90 degrees (1/4 turn)
after 10 more mins (40 mins total) it should be balck and charred all over - take it out
allow to cool
peel off the skin
chop roughly
salt & pepper
mash with a fork
mix in a bowl with lemon juice, tahini and garlic
refrigerate overnight
drizzle olive oil over
serve with warm pita bread
