More eggplant
I cut it
Then I did tht thing with the salt to make it exude that bitter thing
Then I seasoned in the pan and baked it
Before that I added these sweet peppers
They always taste good
Then I addd other veggies
They didn't take that long to bake
And by the end they smelled so good and were yummy
Oh the interesting thing is that since I can't have my food too spicy anymore because of all that is happening, I have had to modify the seasoings I use, so it's a whole new delicious world

History
Everybody knows my history with onion
That i despise onion
That I think it's gross
That I can't stand it
UNLESS it's cooked to dark brown
Then it's sweet and tastes soooo good
Well I wanted to experiment so I bought a bag of onion
YES a BAG. Believe me I stood in front of the onion section a good 10 minutes deciding
I got it
Then did this. Cutting technique be hanged. I chopped every which way but I left the root part on while chopping because I don't like the burning eye feeling.
This. Medium heat for a fairly long time. However the place smells good while it's cooking down
This. I need it all to go really dark. Really dark doesn't mean that it is burnt and it certainly does not taste burnt. Also it smells een better than before.
and this. It's getting there. This is what 2 onions goes down to...
Ate it with THIS
And some of my 'eggplant bacon'. This tasted really good.

Eggplant Experiment
I saw on youtube and online Eggplant bacon
You can make 'bacon' with eggplant
Cut the eggplant into thin strips (they had a mandolin, I did not so it's a little crude)
Marinate in a marinade of oil, soy sauce, parsley, and other things (I think it's whatever you want to taste) for a couple hours
Line on baking tray like so
Bake 350 for 40 mins
There were varying temps
AT one point I turned it up to 425 and forgot to check
So some got burned
The ones that werent burnt tasted really good :)
I don't consider this a fail
I loved the taste, texture, flavor
Just keep and eye on it in the oven and throw away the burnt bits
It tasted really really good
AND I would use it in the same way that you use bacon (I haven't had bacon in years and I don't eat pork)

Quick snack
This was a little confusing to me because I am accustomed to channa
When you make roasted chickpeas starting from the can, it is difficult to know when done is done enough.

Season them up before you pop in oven
It's not crunchy all the way through like channa
However you don't know when crunchy is cruncy enough
SO you take em out before they start to burn

Veg nut 'quiche'
Blitz everything
Nuts
Veggies
Garbanzo

Season everything well
For the crust get the nuts, some of the garbanzo, a small amount of brown flax.
Blind bake crust for 12 minutes at 425 F
Spread the seasoned veg (mixed with garbanzo)
Bake for 10 minutes at 350 F. Then 7 minutes at 450 F
Take out then let cool

Then cut

It is so delicious if you have seasoned everything well. I used garlic, parsley, a touch of salt, a tiny bit of lemon
Make a suace if you want but its delish on it own.
You could have mixed all of these together and made a nut loaf. But I like this.
I will make a nut loaf another day.

Best snack in the world - maybe
I wanted to try butternut squash fries and other recipes

So I got the squash

Cut in half

Then cut some more

Put in pan

Drizzle with a little oil and seasoning (soul food seasoning)
Then bake/roast at 425 for 20 mins
Turn over after the first 10 minutes to avoid burning

Then take em out
And ENJOY

They are crunchy on outside
Soft on the inside
Sweet and savory at the same time
I love it!
I put the rest of the squash that I cut up in the freezer

So I got the squash

Shopping cart
Grocery store trips are fun times for me
I walk slowly along the aisles looking at everything
I like to look at food
BUT
I also like to look at people's carts to see what they are getting
It's so interesting
Then you get to ake up stories about the people based on what's in the cart
They may be making a dinner for two
Or going to have a party
Or going to a potluck
Or picking up stuff for the office pantry
In my cart today was this:

I loved these two guys on the Walking Dead because they were the bravest.
Courage came from their core, and they took no prisoners
But you know they must be really cool in real life.

Trust
I like a few of TV chefs

There is only one who I really trust
Gill Meller from River Cottage

He is such a steady, reliable person.

No ego, just talented, and willing to defer to others who just have to have the spotlight
I like his steady ways, how well he teaches and how patient he seems.
He doesn't go overboard with trying to charm the audience and he doesn't act as if he is trying to sell you something or sell himself. He lets his quiet talent do the talking

He just wants to teach
And you end up just wanting to listen and learn

No OTHER chef has ever had that effect on me

VERY VERY good

I always want to learn from people who seem positive and uplifting
Give clear explanations and who seem to benefit from teaching and helping others
