Dumplings Two Ways

Ok
This is the story
I don't have a steamer/rice cooker so I have to improvise when I am cooking baotz or anything that requires steaming.
So Nancy told me which Asian store to go to to get the Baotz and Potstickers and I went there!
The owners were so sweet!
The guy walked me round to all the freezers recommending what to get.
Then I explained that I didn't have a steamer and he said it could work anyway- just don't microwave.
So I decided to do to the boatz what I would have to do to the potstickers.
This is what happened.

First way : Dumplings in spicy pear chutney sauce
2TBSP oil

Season: dried onion, oregano, parsley, dill, hot pepper, pinch of salt.
Sautee

Cook

Eat

Second Way: Dumplings in gorgonzola cream sauce
2TBSP oil

Season: dried onion, oregano, parsley, dill, hot pepper, pinch of salt.
Gorgonzola cheese crumbles (1/4 cup)

Sautee
Cook

Eat

Food- O-rama

There is a great site called Food Obama Rama (I mixed it up) which gives insight into food and the Obamas.
All I can say is
YAY!
HERE it is

All I can do these days

All I can do these days is post what people send me. Production is a lot, writing is a lot, preparing is a lot.
Too swamped to set up my own kitchen shot in order in a timely manner.
When I post something sans pics, my sister complains- so...I am going on friends and the great emails they send.

This is what one said
Since you are preparing for things....
A little village in my country is known for its peppers.
They are all
over town.
And are delicious.

Sherries

This is what a friend of mine wrote me

You would like it very very very very much.
We used to go harvest these tiny sherries in our vineyard
(our vineyards
had sherries and wine peaches)
Historically they
were put for the workers to have a snack when
working in the fields), and make jars and jars of
these every summer.

With our own liquor (Marc
de Bourgogne).
They are eaten right after coffee,
in tiny tiny cups.

Coincidence? I CALL IT FATE

Ok

Best soup in the world

Last night I made the BEST soup I have ever had.
Maybe it was the best because I was ill and needed soup but I would totally offer it to other people so I know it has to be good
It was a simple but magical blackbean soup.
I Put 2 cups of water to boil, added 2 tea spoons of DRIED (has to be dried cuz i despise normal onion) ONION, 2 tsp of habanero sauce, some oregano and parsley and some seasoning salt and let it come to a boil.
Add One whole HALF RIPE TOMATO that you cut up into cubes
Added one can of blackbeans (Goya).
Let that come to a boil.
Turn off
Let cool for 10 mins
Add little by little to a blender and pulse till beans are not whole
Reheat on stove BUT THE SECRET is to add two tablespoons of crumbled GORGONZOLA.
Serve
Eat
Say Yumm
Cuz you are in heaven
YAY!
(I have leftovers) :)

HAVE MERCY!

I have had Chestnuts before in Trinidad, only we call them Chataigne!
Have mercy!
I knew I had it before!
They just look a little different here!
AND we don't roast them we boil them
Mummy I want chataigne!

Its that time again

Limes in season and hence Key lime pie

At the beautiful and relaxing place

That Brazilian Drink

Cris made the perfect Caipirinhas

Frist the Lemons (all in season and hence key lime pies)

Then the sugar

Then the Other

Squish

Mix

Voila

Roasting on an open fire

We had chestnuts
These are my THIRD favorite types of nuts

Cashews, almonds and then chestnuts

They are starchy (like heavy dry bread) and sweet all at the same time.
Reminds me of this thing in Trinidad which I can't remember the name for right now.... :(

Prop no more

I used this as a prop then had to run home and roast it.

This is the end product...
I put seasonings and herbs under the skin for roasting and thats why it looks so brown.
I marinated overnight.

Vegetarian Wrap

Not Low Carb at all
The wrap is carby

The herb seasoned rice inside is carby

Add Pesto

Tomato

No Cheese because I want to save the rest of my Grogonzola for something else :)
But the bite I took was really yummy.

I have to be careful
My freezer is getting packed with things I make and then don't eat. :(

Tarty

Ok
These tartlets had gorgonzola which is, after brie, my favorite cheese.

Gorgonzola flavor is a mix between blue and feta and so I love it!

They were yummy.

Eat two and freeze the rest for another time

Yum Yum Yum

A Stew

Tomatoes, stewed down, then spinach, peppers, a little green curry, etc..

It was yummy.
I feel healthy :)

For Salsa

I can't wait

hahahaha

After walking

This was soooo good
I just ate it with a spoon.

That guac was heavenly :)

With sudden confidence

So I had successfully made a vegetarian pastry that I loved..
Decided to do it again

This time I mixed the spinach into the panada with the goatcheese

I am gonna have to admit...I added a little too much salt to the spinach so it kinda was too salty...
I dislike these kind of mistakes but You live and you learn ;)

Tried it and it worked

Spicy spinach, gorgonzola puffs
These were so delicious.
I heated the spinach

Mixed it with gorgonzola crumbles

AND spicy habanero chutney

Then I made the PANADA (for the choux pastry), added eggs and panned them

Like so

Baked them

Then had a great time :)
